My first hero chef was Michel Guerard of Les Prés d'Eugénie. It was in his kitchen that I got a tip from a pastry chef from Hackney (yes Hackney) that revolutionised my understanding of how to make puff pastry. I also developed a huge admiration for Michel Roux and Roux on Patisserie. However my most enduring hero chef has been Raymond Blanc. Why I hear you ask.
The reason is not only is Raymond an innovative chef serving Michelin starred food in a beautiful restaurant that combines French style and English charm but he is a really nice guy who never failed to have a chat with me about cookery and life. He cares about the diner as much as the dining and this is why he takes my #1 spot.
I emulate his example and develop positive and warm working relationships with all of our clients, big or small. This is partly why EOS Bakehouse is growing in stature and influence. You see, not only do we bake great bread and pastries but we do so for our clients and take their needs into account. I tell every client the same thing. I am here for you 24/7, and so I am.
